Impruneta has always been linked to clay. Since the Etruscan-Roman times in fact the city was an important center for the production and processing of clay. In the Middle Ages, the most important family in the city, the family Buondelmonti, ruled the inhabitants of the village which had been built around the Church of Santa Maria. Florence in the thirteenth century destroyed many defensive castles and took possession of the territory by encouraging later processing terracotta and making Impruneta
the capital of cotto. The artists of Florence, including the
Della Robbia, obtained supplies for their own materials in Impruneta. After the Medici and Lorena, the town of Impruneta has continued to maintain its leadership up to the present day.
Among the typical products of Imprunetawe can not forget to name the 'Buristo Impruneta' obtained from the processing of pork and the famous 'Peposo alla fornacina di Impruneta,' or Peposo by Brunelleschi. This dish, typical of Florentine cuisine, was created in Impruneta where, according to tradition, the men who worked the clay in kilns (fornacini) loved eating this dish: pieces of lean muscle of beef seasoned in pepper and cooked for 3 or 5 hours in flavored Chianti wine.
