The area was inhabited since Etruscan times as evidenced by archaeological findings. In the Middle Ages, however, the construction of the Via Francigena near the river Elsa allowed the development of the whole territory, many churches were built as the Parish church in Chianni and Pieve d'Elsa arose and cities such as San Gimignano and many castles and fortified villages. The battles between powerful local families and Florence did increase fortified towns such as Certaldo, San Miniato, Semifonte and Castelfiorentino. Florence, however, managed to destroy Semifonte and conquer in a short time the whole area. With the Lorena, local economy returned to increase and the construction of the railroad in 1848 permitted a rapid growth of the industrial sector. In fact, as early as the eighteenth century some cities had specialized: it was the case of Montelupo with its pottery and Empoli with glass manifacturing.

In addition to the Vernaccia di San Gimignano, among the wines of Valdelsa we mention the Chianti Colli Fiorentini, Chianti Montalbano and Chianti Montespertoli, Bianco dell'Empolese and Colli Etruria Centrale. Among the typical products: saffron, truffles, mushrooms, honey, Tuscan bread , the Cinta Senese, Chianina meat,  Tuscan pecorino cheese and Marzolino Lucardo, cured meats such as ham, Tuscan finocchiona, bacon, tripe and soppressata. Finally, the famous Certaldo onions and artichokes from Empoli.
